Smoked Duck Breast with Pineapple Sauce
Ingredient

| Bird’s Eye chili, finely chopped | 20 | g |
| Garlic, finely chopped | 20 | g |
| Hale’s Blue Boy Concentrated Pineapple Flavored Syrup | 100 | g |
| Salt | 1 | tsp |
| Lime Juice | 1 | tbsp |
| Duck Breast, 250 g | 1 | pcs |
| Pineapple Slices in Syrup | 3 | pcs |
| Green Apple Slices | 3 | pcs |
| Tomatoes Slices | 3 | pcs |
| Butter, salted for searing | ||
| Vegetable oil for stir frying | ||
| Cos Lettuce, Red Lettuce, Chive and Parsley for decoration | ||
Method
Sautee garlic and bird’s eye chili till there is nice aroma. Add pineapple and Hale’s Blue Boy Concentrated Pineapple Flavored Syrup. Season with salt and lime juice. Bring to boil and set aside.Add salted butter in saucepan. Sear duck breast. Cut to the desired size.
Sear pineapple slice and green apple till nice golden color. Set aside.
Plate pineapple, tomatoes, apple, lettuce and duck breast together. Decorate with chive and parsley. Serve.
Remark : Ratio of concentrated syrup and other ingredients can be adjusted according to consumers preference in each region.
