Hawaiian Stuffed Duck

Ingredient

Cherry Duck     1     whole
Butter, salted   20    g
Hale’s Blue Boy Concentrated Pineapple Flavored Syrup   100     g
Capsicum, 3 colors, diced   100   g
Onion, diced 100     g
Strawberries, halves     100    g
Red Grape     100     g
Longan in syrup     100     g
Pineapple, diced     100     g
Garlic, roughly chopped     100    g
Butter, salted, for brushing duck    2    tbsp
Ingredients for making sauce
Bay Leaf     1 leaf
Onion, roughly chopped     20    g
Butter, salted     20     g
Hale’s Blue Boy Concentrated Pineapple Flavored Syrup   300     g
Corn starch and water   2     tbsp each
Red Chili, roughly chopped     2   tbsp

Method

1.Sautee garlic and salted butter till nice aroma. Add Hale’s Blue Boy Concentrated Pineapple Flavored Syrup and bring to boil. Add ham, capsicum, onions, strawberries, grapes, longan in syrup and pineapple. Cook well and set aside.

2.Stuff the fillings inside the duck. Bake at 300 degree Fahrenheit for 30 minutes or till well cooked. Brush whole duck with salted butter and serve with sauce.

Method for making sauce.

1. Dissolve corn starch in water.

2. Sautee onions and salted butter till nice aroma. Add Hale’s Blue Boy Concentrated Pineapple Flavored Syrup, chili and bay leaf. Cook well.

3. Add corn starch and water. Bring to boil and set aside.





Remark : Ratio of concentrated syrup and other ingredients can be adjusted according to consumers preference in each region.
