Fermented Pork and Pineapple Condiment
Ingredient
| Chicken broth | 150 | g |
| Coconut Milk | 400 | g |
| Fermented Pork, diced | 300 | g |
| Galanga, finely chopped | 20 | g |
| Lemongrass, finely chopped | 50 | g |
| Shallots, finely chopped | 200 | g |
| Chili, red, yellow and green color, 1/2 inch cut | 6 | pcs |
| Small Bell Pepper, stem removed | 3 | pcs |
| Kaffir Lime Leaves | 8 | leaves |
| Pineapple, small diced | 100 | g |
| Hale’s Blue Boy Concentrated Pineapple Flavored Syrup | 2 | tbsp |
Method
Mix chicken broth with coconut milk. Bring to boil. Add fermented pork, galangal, lemongrass, shallots, chili, bell pepper, kaffir lime leaves and pineapple. Season with salt, Hale’s Blue Boy Concentrated Pineapple Flavored Syrup, fish sauce, tamarind juice and evaporated milk. Bring to boil again and simmer. Serve with fresh vegetable and rice.
Remark : Ratio of concentrated syrup and other ingredients can be adjusted according to consumers preference in each region.
