Thai Dessert Grape Custard Pie

Ingredient

Ingredient (Biscuit)
Biscuit, finely crushed           50     g
Icing Sugar               10   g
Salted Butter, melted           20   g
Glass, 2.5” diameter and 2” high       4    pcs
Ingredient (Grape Custard)
Mung Bean Flour                   20    g
Hale’s Blue Boy Concentrated Grape Flavored Syrup   150   g
Water                           150  g
Grape, small dice               100    g

Method


Mix mung bean flour with Hale’s Blue Boy Concentrated Grape Flavored Syrup and water together. Mix till no lumps and cook in the saucepan over medium heat till mixture becomes translucent and thickened. Remove from heat and add diced grape. Pour over the biscuit up to ½ full.


Method
Mix rice flour, salt and coconut cream together. Cook over medium heat till thickened and cooked. Remove from heat and cool down. Use piping bag with star tip to pipe on top. Decorate with fresh grapes and mint leaves. Serve.
