Grape Mousse Cake
Ingredient
Cream, whipped | 350g |
Butter, salted | 75g |
Water, hot | 70g |
Corn Starch | 20g |
Hale’s Blue Boy Concentrated Grape Flavored Syrup | 180g |
UHT Milk | 250g |
Water, hot | 70g |
Yolk | 3pcs |
Gelatin Powder | 1tbsp |
Additional Ingredients | |
Sponge Cake, any recipe of your preference | |
Size 11” x 15”, 1” thick | 1tray |
Ring Cutter, 2 ½ inch diameter, for assembling mousse cake | |
Lady Finger for assembling mousse cake | |
Whipped Cream, Mint Leaves and Red Maraschino Cherries in Syrup for decoration |
Method
1. Bloom gelatin powder in hot water. Set aside.2. Mix corn starch with Hale’s Blue Boy Concentrated Grape Flavored Syrup, milk, salted butter and yolk. Cook over hot bath with whisk till cooked and thickened. Add bloomed gelatin and mix well. Leave to cool completely.
3. Fold in grape base with whipped cream using whisk.
Method for Assembling Cake
1. Remove sponge cake from baking tray. Cut with ring cutter.
2. Add round sponge cake in the ring. Add grape mousse and chill to set well. Remove from ring and mask the side with whipped cream. Decorate with lady finger. Put on serving plate and decorate with whipped cream, red Maraschino cherry and mint leaves.
Remark : Ratio of concentrated syrup and other ingredients can be adjusted according to consumers preference in each region.
