Strawberry Ice Cream Roll Cake

Ingredient

Cake Flour                           150     g
Corn Starch                       10    g
Milk Powder                           15     g
Sugar                           150     g
Cake Emulsifier and Stabilizer                 20   g
Cold Water                     25    g
Vegetable Oil                           30  g
Egg, cold                             7     pcs
Butter, salted, melted                       50     g
Vanilla Powder                           1    tsp
Baking Powder                       1     tsp
Food Coloring, Pink                       ¼     tsp
Salt                           ½     tsp
Strawberry Ice Cream
Tray, 11x15 inch, 1 inch high – greased, lined with paper and greased again
Ingredients (for Strawberry Ice Cream)
Whipping Cream                           500     g
Strawberries, frozen                       200    g
Hale’s Blue Boy Concentrated Strawberry Flavored Syrup         150     g
Sugar                                     150    g
Water, to mix with gelatin powder                   50   g
Salt                                   tsp
Gelatin Powder                               1    tbsp

Method

1.Sift cake flour, corn starch, milk powder, vanilla powder, baking powder and salt together. Mix sifted ingredients with sugar. Set aside.
2.Mix cold eggs with sifted ingredients just to combine. Add cake emulsifier and stabilizer. Whip at low speed with whisk attachment for 1 minute. Change to high speed for 2 minutes. Add cold water and continue for 3 minutes at high speed. Then, change to low speed and whip for 3 minutes. Add vegetable and melted salted butter and whip for 30 seconds. Stop the machine and fold in with spatula.
3.Divide batter into 2 parts – one without coloring added and another with ¼ tsp pink coloring. Pipe the batter alternately between 2 colors. Bake at 420 degree Fahrenheit for 6 minutes or well baked. Set aside.

Method for Strawberry Ice Cream 
1.Mix gelatin powder with hot water. Set aside.
2.Mix frozen strawberries with sugar and salt. Heat on medium heat till sugar dissolved. Remove from heat.
3.Add gelatin powder mixed with water. Mix well and leave to cool completely.
4.Pour strawberry part with whipping cream and Hale’s Blue Boy Concentrated Strawberry Flavored Syrup in ice cream maker. Churn for approximately 40 minutes or till smooth and thickened. 

Cake Assembling Method
 
1. Place sponge cake in log mould. Add ice cream till ¾ full. Cover with sponge cake and freeze till set. Remove from mould, cut and serve cold immediately.



Remark:Ratio of concentrated syrup and other ingredients can be adjusted according to consumers' preference in each region.
