Mini Strawberry Pie
Ingredient

| Bread Flour | 120 | g |
| Icing Sugar | 50 | g |
| Margarine | 150 | g |
| Eggs | 2 | pcs |

| Fresh Strawberries, brushed with neutral clear glaze | ||

| Custard Powder | 20 | g |
| All Purpose Flour | 20 | g |
| Hale’s Blue Boy Concentrated Strawberry Flavored Syrup | 100 | g |
| Eggs | 3 | pcs |
| Salt | ¼ | tsp |
Method
1. Sift cake flour with bread flour, icing sugar and salt together. Set aside.2. Beat margarine and sifted ingredients with paddle attachment at low speed till crumbly texture is visible. Add eggs and mix just to combine. Rest the dough for 15 minutes.
3. Roll out the dough on cling wrap, approximately ½ cm thick. Line in tart pan and dock the base for better circulation.
4. Bake at 400 degree Fahrenheit for 10 – 15 minutes or till baked. Remove from pan and cool down.
5. Pipe custard fillings in tart shells. Decorate with strawberries, glazed with clear neutral glaze, chocolate decoration and mint leaves.
Method for Custard Fillings
1. Add Hale’s Blue Boy Concentrated Strawberry Flavored Syrup and all ingredients in the saucepan. Heat up and cook till thickened. Remove from heat and leave to cool completely.
Remark: Ratio of concentrated syrup and other ingredients can be adjusted according to consumers' preference in each region.
