Sala Sticky Rice with Coconut Cream Topping

Ingredient

Sticky Rice 500 g
Coconut Cream 350 g
Sugar   150 g
Hale’s Blue Boy Concentrated Sala Flavored Syrup 120 g
Food Coloring, Strawberry Red  ½ tsp
Alum, finely crushed (for soaking rice) 1 tsp
Salt 2 tsp
Coconut Milk Layer
Water for soaking rice
Ingredients for Coconut Milk Layer
Rice Flour   20 g
Sugar 20 g
Coconut Cream 250 g
Salt   ½ tsp

Method

1. Rinse uncooked rice thoroughly. Mix rice with crushed alum and add water to cover. Let the rice immersed in water for at least 3 hours to 1 night.
2. Strain rice and steam for 20 minutes or till cooked.
3. Mix coconut cream with sugar, Hale’s Blue Boy Concentrated Sala Flavored Syrup, food coloring and salt. Pour over hot rice and mix with wooden spatula till well combined. Cover the let the rice soaked the mixture for 30 minutes. Pour into 10”x10” tray and spread evenly. Pour coconut milk layer on top and leave to set. Cut and serve.
Method for Coconut Milk Layer
1. Mix all ingredients together in the saucepan. Heat till cooked and thickened. Pour over cooked sticky rice in square pan.


Remark : Ratio of concentrated syrup and other ingredients can be adjusted according to consumers preference in each region.
