Sala and Banana Mousse

Ingredient

Cream, whipped

Bananas, ripe, mashed

Water, hot, for blooming gelatin powder

Sponge Cake, any recipe of your preference, cut with round cutter

Hale’s Blue Boy Concentrated Sala Flavored Syrup

Chocolate Decoration and Sugar Flower for decoration

Method

1. Bloom gelatin powder in hot water. Set aside.

2. Mix mashed bananas with Hale’s Blue Boy Concentrated Sala Flavored Syrup, milk, corn starch and salt. Cook over hot bath till thickened. Remove from heat and add warm gelatin. Leave to cool completely.

3. Fold in whipped cream in banana mixture with whisk. Set aside.

4. Use paintbrush to paint the mould with Hale’s Blue Boy Concentrated Sala Flavored Syrup and pour white chocolate over. Flip upside down to remove excess chocolate and leave till chocolate crystalized.

5. Pipe banana mousse approximately ¾ full. Place sponge cake and refrigerate till set. Unmould and decorate with chocolate decoration and sugar flower. Serve.

Remark : Ratio of concentrated syrup and other ingredients can be adjusted according to consumers preference in each region.
