Red Beans with Palm Seed Bun

Ingredient

All Purpose Flour 800 g
All Purpose Flour, bleached 200 g
Butter, salted 150 g
Sugar 150 g
Instant Dry Yeast for Sweet Dough 10 g
Milk Powder      20 g
UHT Milk 450 g
Eggs 2 pcs
Salt 1 tbsp
Red Beans and Palm Seed Fillings
Baking Trays, greased   3 trays
Palm Seed for Decoration
Ingredients for Red Beans and Palm Seed Fillings
Red Beans, soaked in water and boiled  300 g
Palm Seed, small diced 200 g
Sugar 100 g
Butter, salted    20 g
Hale’s Blue Boy Concentrated Sala Flavor Syrup 100 g
Salt 1/8 tsp
Food Coloring, Strawberry Red  1/8 tsp

Method

1. Sift all dry ingredients together. Set aside.

2. Mix dry ingredients with the rest of ingredients using hook attachment. Knead with medium speed for approximately 10 – 12 minutes or till smooth and elastic.

3. Scale and divide at 40 g each. Make round balls and roll out. Cut in stripes but leave the top and bottom about 1 cm. Spread red bean and palm seed fillings and roll. Attach two ends together and proof till double in size.

4. Bake at 400 degree Fahrenheit for 8 – 10 minutes or till baked. Decorate with red beans and palm seed fillings.

Method for Red Beans Fillings

1. Mix Hale’s Blue Boy Concentrated Sala Flavor Syrup and all ingredients, except salted butter, in brass saucepan till the mixture cooked and does not stick to the saucepan. Add salted butter and mix well. Remove from heat and leave to cool completely.

2. Scale at 30 g. each.

Remark : Ratio of concentrated syrup and other ingredients can be adjusted according to consumers preference in each region.
