Marble Mousse

Ingredient

Water, hot   70 g
Cream, whipped 400 g
UHT Milk 125 g
Butter, salted 75 g
Yolk 3 pcs
Ready Mix Jelly Powder, Strawberry Flavor 1 pack
Hale’s Blue Boy Concentrated Sala Flavored Syrup 100 g
Food Coloring, Strawberry Red 1 tsp
Vanilla Powder ½ tsp
Corn Starch 2 tbsp
Gelatin Powder 1 ½ tbsp
Whipped Cream, Strawberries and Mint Leaves for Decoration
Serving Glasses

Method

1. Mix gelatin powder with hot water. Set aside.

2. Mix corn starch with milk, salted butter, yolk and vanilla powder and cook over hot bath using whisk till mixture is cooked and thickened. Add warm gelatin and mix well. Leave to cool completely.

3. Divide the mixture into two parts. Mix the first part with Hale’s Blue Boy Concentrated Sala Flavored Syrup and food coloring till well combined.

4. Fold in each parts with half of whipped cream using whisk.

5. Mix ready mix jelly powder as described on the package. Set aside.


Remark : Ratio of concentrated syrup and other ingredients can be adjusted according to consumers preference in each region.
