Sala Cider Salted Red Bean Kanom Tien

Ingredient

Ingredient (Dough)      
Glutinous Rice Flour       300  g
Hale’s Blue Boy Concentrated Sala Flavored Syrup         130    g
Water, warm                         130     g
Salted Red Bean Fillings               20   g each
Vegetable Oil for Coating                   100   g
Banana Leaves, cut in circle 6” and 7”            28      pcs each
Garlic, finely chopped           20     g
Coriander Roots, finely chopped         20     g
Ingredients (Salted Red Bean Paste Fillings)
Vegetable Oil               50     g
Shallot, finely chopped             50    g
Red Beans, cooked and roughly mashed     350     g
Sugar                     100     g
Salt                  1     tsp
Ground White Pepper           1     tbsp

Method

Method
1. Mix glutinous rice flour with Hale’s Blue Boy Concentrated Sala Flavored Syrup and warm water. Knead until soft, approximately 30 minutes.
2. Scale the dough at 20 g each. Fill with red bean fillings and cover completely. Dip in vegetable oil and wrap with banana leaves. Steam in steamer over medium heat for 30 minutes or till cooked. 


Method
1. Ground garlic and coriander roots with mortar to form a fine paste.
2. Heat vegetable oil in the saucepan. Add shallot and garlic paste. 
3. Add red beans, sugar and salt. Stir fry till water evaporated and add white pepper. Leave to cool completely.
4. Roll the fillings at 20 g each.
